It’s also a great excuse to make the drive to Queen Creek, grab something to eat and spend a little time under the olive trees.

Staying home? Here’s an easy summer dinner idea that doesn’t require spending hours in a hot kitchen.

You’ll Need:

πŸ₯¬ Arugula
πŸ§€ Burrata or feta
🌰 Toasted walnuts
πŸ«’ Olive oil
🍯 Honey
πŸ₯„ Balsamic vinegar

Lightly grill the peaches until they begin to soften and develop grill marks.

Add arugula, cheese and walnuts to a serving bowl. Whisk together olive oil, balsamic vinegar, honey, salt and pepper for a simple dressing.

Fresh, simple and very Arizona-summer friendly. πŸ˜‹
